BBQ Meatloaf

It seems everyone has a family recipe for meatloaf. Some folks add bread crumbs, some don’t. Some add veggies, some don’t. Well, our recipe is nice and simple, with a little sweet and spicy kick from the addition of our Sweet Dixie BBQ Sauce. And instead of using bread crumbs, we use oats, as they soak up all those tasty juices and keep the meatloaf moist and flavorful.

Ingredients:

2 pounds ground beef
1 ½ cups quick cook rolled oats
2 eggs, lightly beaten
1 medium yellow onion, chopped (about 1 ½ cups)
1 jar Martin’s Sweet Dixie BBQ Sauce, divided
1 T Worcestershire
1 t salt
½ t black pepper  
½ t celery seed
¼ cup dark brown sugar, lightly packed

Method:

Preheat oven to 350 degrees. In a large bowl, mix ground beef, rolled oats, eggs, onion, ¾ cup of the Sweet Dixie BBQ Sauce, Worcestershire, salt, pepper, and celery seed until fully combined. Spray loaf pan thoroughly with non-stick spray and then form meat into the pan. Smooth and level the top of the meatloaf.

In a medium bowl, mix the remaining ½ cup of Sweet Dixie sauce with dark brown sugar. Coat the meatloaf with ¼ cup of glaze, reserving the remaining glaze for later. Bake for 45 minutes, and baste the meatloaf with another ¼ cup of glaze. Continue to cook for another 15-20 minutes, or until internal temperature is 165 degrees.

Cool meatloaf for 10 minutes, slice and serve. Any remaining glaze can be used as a sauce if desired.
